I think "Happy Holidays" is most suitable expression, but I am not offended when someone says "Merry Christmas" because I feel the term Christmas has evolved to simply imply the entire 5 weeks between Thanksgiving and the 25th of December, the winter solstice, Kwanzaa, Hanukkah, and the birth of Jesus.
