I'm playing the demo as a caster. Its great until I run outta mana, and can't buy more. There's the one magik shop in the first town but her supplies are low and take forever to re-stock. I have Meditation but it isnt very useful at low levels, apparently. I remember Diablo 2 had the same problem for years and only semi-recently made a patch that allowed you to buy mana from vendors (years after the game's release).
What's the easiest way to get mana?

What's the easiest way to get mana?
1) Camping (hit the 'C' key, or the little campfire button);
2) Mana potions (the potions that are middle-blue in color); or,
3) Walking around for a while!

#1 is the easiest and most cost effective.
If you want #3 to go faster, you need to pump points into Perception (PER) - get PER up to at least PER=40, and this should start being less of an issue, as you'll regenerate Mana much faster.

Easiest way is to just (C)amp. Mana recharges very fast while camping and you can camp anytime there isn't a monster within viewing range. Stores restock every 8 days and the amount on hand is randomly generated each time. You can reload if she only has one or two in stock. You might also be able to reach the 2nd village in the demo, but I'm not sure on that. It's one map west, then one north, then one east of the starter village's location.
A cheaty way to do it would be to buy up her stock, exit the game, delete her store's info from your save file and reload the game.

In answer to the title question, the easiest way to get more mana potions is to make them. However you are unlikely to find much in the way of raw materials, not to mention recipes, in the demo. Also, you'd have to spend your precious skill points on Alchemy, since trainers are not available to you.
After you buy the game, you can train in Forage (for ingredients) and Alchemy. Meanwhile, pouring all of your attribute points into Perception from the beginning will solve most of your Mana problem.

So would it be a good idea to crank Perception and Meditation? I think I'm gonna buy the full version and I wanna know if I should build a new character or not; this lack of mana thing is killin me...

You can put 5 points into Meditation and up it to 10 by the end of the game. I'd focus way more on Perception than Meditation. Meditation costs skill points and Perception costs ability points. There are 25-30 skills and only 8 attributes, plus pumping perception gives you more mana points. You also get one mana point for each point of perception at character rollup. I always put every single point into perception once I've met the criteria for the mage (wisdom or intellect).

Quite frankly, you'll be better off with PER=40 than you would be with PER=32 and Meditation=8.
So, for future reference - for spell casters, just try to crank as many points into PER (and, also, INT or WIS) as you can, and don't bother with Meditation at all.

I can't disagree with Mr. Ball. I grabbed meditation for my characters just so that I could pump both at the same time. In the long run, meditation serves no purpose. I grab it early so that I can pump both perception and mana regen for the early game. By mid to late game, you can have perception as high as you'd like it.
I personally never touched speed, dexterity, endurance or concentration my first playthrough. I raised strength in the latter stages just to carry heavy loot. Even with a level 6 Ogre Strength, 2 rings with +3 strength, and a +5 strength amulet, I was getting over-burdened. I never found armor that put more strength points on the armor than it cost to actually wear the armor. You might get +2 strength (8 pounds of carrying capacity), yet the armor would weigh 15 pounds or more. I never got lucky and found Dragon Skin armor with +2 or higher stats.
I'd love to be able to enchant armor with attribute raising stats. Maybe next game....if there is a next game....
