's funny, I just picked up Eschalon again after a 6 mo. hiatus, and started a fighter for the first time. I put lots into Endurance (got to 30 before level 5) and Strength, but didn't skimp on Dex and Speed.
Hide in Shadows 5 to make up for the fact that I had no ranged attack for the first 1/3 of the game or so.
Some Mercantile in order to buy weapons to hack doors and chests with, and for arrows now that I have bow skill.
I went ahead and bought 3 levels in elemental for the predator sight spell, highly recommended for a hide-in-shadows sort of character!
I am atheistic, and kind of wish I had gone with druidic. I put 5 pts in survival and don't really find it helpful compared to the increased HP regain outside for druids.
So now I'm level 7 and wish I had a better ranged attack. (Also, I got dungeon fever right at the start and didn't cure it for 5 levels!!) Other than that, it has been quite fun. I'm finding replay value in this game!

...probably in that order.
Assuming you go for a straight sword(etc.)-using fighter, and not a bow-wielding fighter, Strength increases your MaxDamage on hitting.
Endurance increases both your HP, and your HP regeneration. (Supposedly, you want a max of Endurance + Survival = 38, but you don't need Survival to get there necessarily, as Endurance = 38 gets you there just as well.)
Dexterity increases ToHit, esp. when using Bows (where it effectively counts "double" for ToHit & MaxDamage).
I think I'm going to give a Fighter another go-round, and I've decided to max out my Endurance at the beginning, and then add to Strength (and Dexterity) after that.
The other Attributes basically don't help you (at least, not nearly as much), if you go "pure" (i.e. mostly non-magic, non-bow wielding) Fighter.
In terms of the Skills, I'd be tempted to max out Swords at the beginning, and then also put points into Light Armor. (Do the same for Heavy Armor) later. I think that leaves you with 12 Attribute points to give, so go maybe go with Hide in Shadows, Move Silently, and then I'd probably go with Pick Locks and Spot Hidden, though Skulduggery or Dodge would be OK too.
In terms of class... I'm not sure. Druidic gives you faster HP regeneration above-ground, but the other classes have pluses/minuses too. For race, go with any one that gives a Strength and/or Endurance and/or Dexterity bonus.
I'm sure other people will have other suggestions...
