From a distance, I'd guess?

I don't know, I just hit them and hope they don't inflict me when they die. At 40% resistance their toxins don't generally affect me.

I haven't tried using bows, but I think I remember someone on here saying that bows are quite effective in Eschalon. (Unfortunately I haven't found offensive magic to be extraordinarily useful... defensive magic is another matter.)

They are somewhat annoying pests. At level 10, at least. (I've been away from the game for a while.)
Certainty: a character-driven, literary, turn-based mini-CRPG in which Vasek, legendary "Wandering Philosopher", seeks certainties in a cryptically insular, organic, critically layered city.

A bow works quite well. Also the entangle spell at level 5 or 6 holds them still while you kill them with arrows.

Low level attack spells work nicely. If you attack at night you can hide in shadows - some spells don't break your cover, you can attack pretty much in safety.

I use arrows, and I find the hit rate is best when I'm standing 2- 5 spaces away.
If you have more than one to deal with, walk round and around them so they bunch up together. (Don't let them get right next to you!) Keep attacking one in the middle of the group. When it finally dies, it will splash all the others next to it with acid- taking 12+ hit points from them.

If they get too close to you, run away. You are faster than they are. Then turn and snipe them some more.

As I think I mentioned elsewhere, I like dragging the grubs around, sniping at a bunch of them, until all are pretty weak and with one final arrow I can cause a chain reaction and kill a bunch more with the splashes.

My record is six.

I just discovered another fact about these lovely creatures. They attack Tauraxes!

Most hostile critters will attack each other if they can't see you. Bloodsippers will attack goblins, goblins will attack noximanders, and so on. You can have a merry time leading them around and hiding in shadows while they slaughter each other. Try to get the killing blow for the experience, though. Also, the giants are enthusiastic killers of acid grubs if you lead them into their village.

Some tips:

Use terrain to your advantage (when possible) - acid grubs aren't the brightest bulbs in the string, it's relatively easy to run them around an obstacle such as a river with a bridge such that they're on one side, and you're on the other. Walk along the bank of the river (or chasm) so that it follows, until you can't see the bridge on the screen anymore. Now fire away with arrows or ranged spells! This applies to other monsters that are slower than you are, also, except flying or non-material creatures (such as wasps or spectres.)

I always recommend having a ranged weapon or spell regardless of your character class - it makes (virtual) life so much easier! :)

And, of course, the previously posted comment; get monsters to fight each other instead! Stay in bow range, and monitor the health of the combatants. Ping the healthier of them with arrows so as to wear down all the combatants as equally as possible; this way, whichever one wins, they'll still be weakened if they turn on you!

Finally, look for controllable doors/gates/portcullises (i.e. one with a lever to open/close it). These are great monster killers... if you time it right!

Fire dart spell works well, and you don't get hit with the acid.

As an incorrigible powergamer, I actually try to avoid this. If the Taurax and Grubbs kill each other, you don't get the XP!

But it is fun to watch, like kiting the thugs from the shortcut in Nort Parish through the marsh to pick up all the fungal slimes, then running them down to the edge of the map to fight each other

Ah but if you merely ensure that you make the killing blow you still get the full experience even with the "help" doing most of the work.
