How often do shops restock money and items? get new stuff?

I am wanting to know how often shops get new items or different items,
and what trigers this, and/or how often do shops restock items and get more
money?

Every game week. Sleep 7 times and on the 8th day they restock with goods and cash. You can save before talking and reload if they don't have what your looking for. Be aware that the further away from the start the more cash and high priced goods they will have. This will NOT work if you have the difficulty setting at no reloads of chests and other things from the start of the game. If that is the case you have to wait another week and cross your fingers.
